INGREDIENTS:
2 tablespoons instant coffee granules
1 can (14 oz) sweetened condensed milk
2 cups evaporated milk
6 large eggs
2 tbsp water
1 tablespoon warm water
1 teaspoon vanilla extract
1/2 cup sugar
1/8 teaspoon salt
HOW TO COOK:
Combine water and sugar in a bowl (microwave- safe).
Stir well until sugar is completely dissolved.
Microwave (high setting) for about 4 to 5 minutes or until color changes to honey gold.
Quickly tranfer to ramekins or llaneras.
Gently whisk the eggs (until there are no streaks of white) in a bowl.
Add the condensed milk and stir until combined.
Add evaporated milk and stir until well-combined.
Using a fine mesh sieve or cheesecloth, strain mixture. Set aside.
In a small bowl, combine coffee granules and warm water then stir until coffee is completely dissolved.
Add the dissolved coffee, vanilla extract, and salt to the strained egg & milk mixture and stir until blended.
Pour into the prepared ramekins or llaneras.
Cover ramekins or llaneras with foil and arrange in a wide, oven- safe dish with about 1-inch of water (water bath).
Bake in a 375 F or 190 C oven for about 40 to 50 minutes or until a toothpick inserted comes out clean.
Remove from oven, allow to cool and refrigerate to set.
To serve, turn flan over on a serving plate, ending with caramel on top. Enjoy!
