INGREDIENTS:
1 pack (200 g) pancake mix
1 cup ube halaya
1/2 cup butter
1 large egg
1/3 cup coconut milk
1/4 cup water
2 tbsp oil
Butter, for serving
Pancake syrup, for serving
HOW TO MAKE:
In a large bowl, combine the ube halaya, egg, water, coconut milk, and oil.
Whisk together until no large lumps remain and mixture is well combined.
Add- in the pancake mix, and gently whisk in until mixed and thick then set aside.
Preheat a nonstick frying pan over medium heat.
Melt 1 tbsp of butter in the pan for every pancake.
Drop the ube batter by the 1/3 cupful onto the middle of the pan and cook until the tops have bubbled up and the underside has browned.
Flip and cook until the pancake springs back when pressed gently.
Remove from pan, and transfer to a plate.
Repeat with remaining pancake batter.
Serve with butter and pancake syrup, if desired. Enjoy!
Note: Makes 8 pcs 6-inch pancakes.
